Weekly thing

We didn't go long without seeing each other this weekend. Let's see, he left Sunday at 3:30pm and I was at the apartment this morning by 8:00am .... so yeah, you can see we like being with each other! If you guys didn't know that by now :p

Like every Monday so far it's grocery day and meal prep for Cain's week! So while Cain picked up the apartment I went to Kroger's. I love the Kroger's in Waynedale, It's pretty stocked with everything I need for the week. 

Have you guys ever looked at the back of a potato chip bag and seen either Vegetable oil or Canola oil? These are two very bad oils that you should not have in your diet. 



Cain does love potato chips and I can't make them myself if I'm not there so I was able to find one with just Olive oil and sea salt! A much better choice! I love Cain to death, and would hate bringing home things for him to eat that could be bad on his heath. And for our kids one day!

Next time shopping for those ever yummy favorite chips, check the back!



I was about half way done at this point. I already had chicken breast and turkey at the apartment so all I needed meat wise was the beef and bacon.

It's funny now when I check out, I actually listen when the cashier tells me the total price! Before when checking out for my mom, or even just for myself I wouldn't listen. I didn't have a steadying budget and my mom was buying so, you know... who cares :p But now, no I listen and remember. That way I know what to budget and if I spent to much or if I have some left over to add to next weeks grocery trip!


Cain's a pal and always comes out to help carry in the bags! Which by the way I need to switch over to the reusable eco friendly bags for grocery's. It's on my to do list to have by this spring! HOLD ME TO IT!

Once in the house I get everything out that I need to either cook or clean.  I always wash the fruit! I think of the hands and places it was before it made it into my kitchen and get grossed out so I use vinegar and water. And add lemon juice to give it a little fresh taste!


I made a turkey chili that had zucchini in it for lunch, which was amazing! It really wasn't chili, it had the spices like chili but no beans so I think that's why it felt different but yet was still so good!

Next I baked a chicken breast for Cain's Cream Cheese Burritos then I mixed in the onions and jalapeño in the beef for burgers. (I freeze both the burritos and burgers for Cain to pull out when he wants either)


I also sliced 2 chicken breast for him to bake some chicken fingers tonight! For the breading I used Almond meal with some spices.

He hasn't told me yet how they turned out. I'm doing pretty good so far and haven't had any "Don't make that again" comments lol

I was telling my mom today (once I was home) that I'm honestly in the kitchen the whole time I'm at the apartment lol Once I'm done it's time for Cain to leave for his classes and me to go back to my parents. I haven't been able to enjoy the apartment yet. But that will come soon!

Yay! Another home run! Hope this keeps up, but I know when I do mess up... and I will lol that Cain won't mind and will be really nice about it. He is a keeper.

Valentine special

It's funny how as soon as Cain is around, blog posting is out the window! Blog? What blog? Cain is here can't you see I'm busy staring into those eyes of his?!

Cain has left for the week and I'm here with my parents. So I thought I'd do some catching up! I will be heading over that way tomorrow to go get his food and prepare that food for the week! My favorite thing to do at the moment ;)

Every day with Cain is a blessing. We laugh together. All day and night. We can just be sitting doing nothing and start talking about something silly and start full out laughing. That's what I love the most, laughing with Cain. And the giggles I get. The ones I can hear myself do and know "Wow, I'm such a girl" He makes me happy. He makes me feel important. He is there for me to vent. About anything I want. He nods and actually listens to what I am saying. I know when someone is "Listening" but isn't really listening. Cain doesn't do that. He gives me his time, and cares about what I have to say.

I'm blessed.

I got to watch Emma Grace last week! Isn't she a doll! She is getting sooooo big! Too big. I want her to stay a little baby forever. Well maybe not forever. It might be fun to actually talk to her and following her around. And take her shopping and get our nails done together. Okay, so yes I want her to get big... just take it a little slower ;)




So I've misplaced the photo I had for Wednesday. It was of the outside after our little snow storm. Not that it was really little. It was big, just didn't seem as big when you compare it to all the others we have had. But here are the pictures that I took for the Valentines special I had going on.


Beans (Lilly) And D (Darcy) .... Note: I love nicknames on kids. I wish I would have had one! They are sharing a room now so they need some cute pictures together! Darcy wasn't quite sure of the whole .... sit here, don't move.. and smile... thing. Just wasn't feeling it lol but we still got some cute ones!




Kristan emailed me when I posted that I was doing a special. This was my first time photographing them! They were the CUTEST family EVER! I loved their red themed outfits.



I can't take the red hearts!!! So stinking adorable right?!

Well I thought so at least.

I love doing special because I can meet new people who I might not have met. I'm all for a good deal and I love being able to bless others with memories of their loved ones.

Well I'm going to start looking at a grocery list for tomorrow, and get things together to take to the apartment!

Target shopping ... sort of

So we had some exciting things going on yesterday! First we had this picture posted at Times square in New York! Thanks to AXE for supporting the Military couples!




Then it was shopping time! Well sort of. It felt like shopping but we didn't come out of the store with any bags. We went to register! 

I have been looking forward to this since the day after we got engaged! I thought "YES! I finally get to go to Target and use that gun thingy!!!" That's really what I said. 

We could have done it all online like I did for Crate and Barrel but what fun is that? I wanted Cain in on it and I wanted to act like we could get anything we wanted. He asked how much we would really get. I laughed and said "Probably nothing but this is fun isn't it?!" My colors have turned out to be a Turquoise minty Blue and Classic Red. And guess what, Target has a lot of things with those colors! I hope to get at least a couple things for the kitchen that we found there. Along with silverware and chairs! Two things we have yet to get!


After the "shopping" trip we went back to the apartment where I made Cain's lunch and he dug into studying. I went to the grocery store to prepare Cain's meals for the week. Thankfully we had a lot of left overs from Super Bowl night so that was one less day to prepare for. Also Cain will come back to  my parents early this week because of work so it's not a whole weeks worth of food this time. 

I left shortly after that way Cain would finish studying before a big test he had (Which by the way he did awesome at!) When I got home and went up stairs Nova was there in the door way of the bathroom waiting for me.

Today I didn't have gracie (bummer!) I miss her. And if this snow that they say is coming, really comes. I probably won't see her tomorrow either. (bummer!)



Let's see how much snow we really get! But until then, who's watching Biggest Loser tonight?! I am!

Weekend and SuperBowl

Where do I begin?

Let's see. Last Thurday Gracie helped me make my very first toothpaste! It turned out... well... let's just say it turned out. It's not horrible. Just not, what I'm used too. I will for sure use it until it runs out but might make some changes for the next time!


Friday I got a surprise! By none other then Cain! His classes got changed so instead of going to class, work then coming home he came straight to the house and we spent the whole morning/afternoon together! He left for work around 4 and didn't get home until 9:30 that night. Nova was waiting for him as you can see....


Saturday turned into a snow day! I was going to go to Cat's bridal shower but because of the ice/rain/snow mixture Cain thought it best I stay home and not risk it. We enjoyed the afternoon together until Cain went to work!

Sunday was a blast! Due to the weather church was canceled (that's not why it was a blast though, of course!) It was because my mom and I had some AWESOME food to make and we were all excited about the football game (that was extremely a disappointment)




Aren't they so cute!? I just love looking through my camera's lens at them. I then put the camera down and enjoy the moment. Nova brings so much fun into our house. She is a spoiled brat thanks to my mom! But is very obedient thanks to her parents, us!


Around 3:00 we started the prep work for the sweet and sour meat balls/wings/cookies when we heard someone... something pull into the drive. We all went to the door to see our egg provider in the drive way, on his snowmobile. In no way did we think we would be getting our eggs that day. With 7 inches of snow we thought we would be without eggs for the week. But nope! Glen did not let us down! 


 This might be a first, eggs delivered by a snowmobile. Unless you live in Alaska maybe!

His son told Cain he could take a ride. Within 30 seconds Cain had his boots, jeans, jacket and gloves on! He was pumped.

Nova wasn't quite sure what to think, so she stayed back beside my mom.

After that excitement went down it was back to cooking! I was going to make everyones favorite Chocolate Chip cookies!

Here's what you'll need:
1 cups Almond Meal
1/4 t. Sea Salt
1/8 t. Baking Soda
1/4 t. Cinnamon
3 T. Coconut Oil
2 T. Honey
11/2 t. Vanilla
4 T. Chocolate chips

We love our cinnamon!

As you can see we use these chocolate chips. You have to watch out for chocolates because most have soy in them and that's not good! Also dairy, which I don't eat. But if you do just make sure that they chocolate it at least 75% real cocoa.


We just love our coconut oil! It's used in our house for about everything!!


Mix everything together....


And you get this magical thing we call "Cookie dough" And oh how I love it!


It takes 10 minutes to bake and they are the best! It's so hard to eat just one, so we eat like 4 or 5.

So back to those sweet and sour meat balls! We got the recipe from Against all Grains! Everything we have tried of her's is amazing. Go check her website out HERE! <

Now the boys had to find the perfect sauce for their wings. With the help of many hot sauces they found the perfect mixture...

My mom also made this "Ranch" dip. It was AMAZING! Everything was all natural.


The finishing products of our night were spot on. We enjoyed all our food with no guilt!

Here is the Peach crumble I made with Walnut and Coconut flour for the topping!


Like I said before the game was a big disappointment. We sat there wishing it was all over already. At half time we played a game of Ping Pong and then I went to bed shortly after. I'm not much of a night owl. 

But all in all, a great weekend!
